Mango Lassi

Ingredients
  • 1-14 oz. Roland® Mango Slices, drained, cut into equal-sized pieces and frozen
  • 1/2 cup Plain yogurt
  • 1 cup Roland® Coconut Milk, chilled and divided
  • 4 tbsp. Roland® Maple Syrup, divided
  • 1/2 Each Juice and zest of 1⁄2 lime
  • Roland® Fine Sea Salt, to taste
  • Water, as needed
Directions
  1. Place the bowl of a stand-mixer or other large mixing bowl in the freezer to chill.
  2. Place frozen mango, yogurt, 1⁄2 cup coconut milk, 2 Tbsp. maple syrup, and lime juice in a blender. Blend until smooth, adding cold water as needed to reach pour-able consistency.
  3. Combine the reserved chilled coconut milk, maple syrup, and a pinch of sea salt in the chilled mixing bowl. Whip the mixture with a wire whisk attachment until light and holding soft peaks.
  4. To serve: pour the mango mixture into a tall, clear glass, and top with the whipped coconut milk. Garnish with freshly-grated lime zest. ©2015 Roland Foods, LLC
