Spicy Artichoke Hummus

Ingredients
  • 2 cans Roland® Chick Peas, drained
  • 1 1/2 tsp. Roland® Fine Sea Salt, or more to taste
  • 1/2 cup Roland® Tahini
  • 2 small cloves garlic
  • 1 lemon, juice only
  • 1/4 - 1/2 cup Water
  • 3 jars Roland® Spicy Grilled Artichokes, drained
  • 1/4 cup feta cheese, crumbles
  • 1-2 tbsp. Fresh parsley, chopped
  • Roland® Extra Virgin Olive Oil
  • Pita chips
Directions
  1. Combine chick peas, salt, tahini, garlic, and lemon juice in a food processor and pulse. With the food processor running, slowly add water to achieve desired consistency.
  2. Add two of the three jars of spicy artichokes to the food processor bowl and puree until smooth.
  3. Roughly chop the remaining spicy artichokes and set aside for garnish.
  4. To serve: spread hummus on a plate, sprinkle with chopped artichokes, feta and fresh parsley.
  5. Drizzle with extra virgin olive oil and serve with pita chips. ©2015 Roland Foods, LLC
